"SKYRIM": SALMON STEAK.

In "Skyrim" one of the many food items you are able to cook salmon steak. I love salmon, but just a straight up piece of salmon meat with a salt pile is super boring. So, one night we decided to barbecue and I was really craving fish (more like the bottle of wine I wanted to crack open, and just wanted a complimentary protein!) I went to the grocery store and I got this beautifull piece of salmon, and I'm like, "Hey, I'm going to make something super delicious with ingredients I already have at home!" and it seriously turned out to be one of the best salmon dishes I ever had. It's very rustic and fall-like, and just plain delicious. I know it's kind of a stretch from it's in-game counterpart but, hey, it's so good I had to share it with you all. So let's just call this Hearthfire Salmon Steak. :)

LOOT: 4 SERVINGS.

MATS.

1 1/2 lb. fresh salmon

1 1/2 tsp fresh ginger, grated

1 large garlic clove, minced

1/2 cup cooking sherry

1/4 cup soy sauce

2 tbsp olive oil

2 tbsp butter

1 large sweet onion, sliced thin

2 gala apples (or red apple of choice), sliced thin

2 tbsp honey

1/2 tsp pepper

1 tbsp balsamic vinegar

EQUIPMENT.

microplane

9 x 13 pan (or large shallow dish)

small saucepan

large frying pan

knife

fire

tongs

foil

barbecue

STRAT.

1.) In a 9 x 13 baking dish (or large shallow dish) mix together grated ginger, minced garlic, cooking sherry, soy sauce, and olive oil. Pour 1/4 cup of the marinade in a small saucepan and set aside.

2.) Place the salmon in the remaining soy sauce mixture in the dish skin side up to marinade. Set aside.

3.) In a large frying pan melt the butter over medium-high heat. Add the onions and sauté until the onions start to sweat and become translucent, about 5 minutes. Add the apples, honey, pepper, and balsamic vinegar and cook until the apples and onions are caramelized, about 15 minutes.

4.) Place the small saucepan with marinade over a low flame and gently reduce until it is slightly thickened, about 10 minutes. Set aside.

5.) Heat up your grill and get the coals nice and hot!

6.) Tear off a piece of tin foil large enough to wrap your salmon in. Place your salmon in the foil skin side down and fold up the sides to make a little bowl. Pour the remaining marinade in the foil to make about a 1/4" layer and fold it up, leaving a little hole at the top for ventilation.

7.) Place your salmon packet in the middle of the grill. Cover your grill and let it cook for 15 to 18 minutes, depending on the thickness of your piece. Your fish should be flaky, but moist.

8.) Serve salmon warm with a nice helping of caramelized onions and apples and a drizzle of reduced marinade. Happy nomming!
