"HARRY POTTER": PUMPKIN PASTIES.

In celebration of the beginning of Fall, I had to do a pumpkin recipe! This is a delicious treat usually found on the Hogwarts Express. If you are a muggle and unable to reach platform 9 3/4, don't worry! Here's a recipe for Pumpkin Pasties so you can enjoy them without trying to get to the Honeyduke's Trolley. Super quick and easy puff pastry filled with an earthy, sweet pumpkin custard. If you choose, you can buy frozen puff pastry, but the dough recipe is so tasty and fast I would recommend making it instead :) You will surely look like a wizard in the kitchen!
LOOT: ABOUT 30 PASTIES
MATS.
PUFF PASTRY.
3 cups all-purpose flour
1/2 tsp salt
1 1/2 tsp sugar
2 sticks butter, softened
1/2 cup cold water
FILLING.
14.5oz can pumpkin puree
3/4 cup sugar
1/2 tsp salt
1 egg
3/4 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp ginger
1/4 tsp ground cloves
1/4 tsp vanilla extract
1/4 cup flour
ASSEMBLY
2 egg yolks
1 tbsp water
1/4 cup sugar
1/2 tsp cinnamon
EQUIPMENT.
large bowls
pastry cutter
plastic wrap
whisk
rolling pin
4" round cookie cutter
teaspoon
brush
oven
sheet pans with silpats or parchment paper
STRAT.
PUFF PASTRY.
1.) In a large bowl, combine the flour, salt, sugar, and softened butter. Using a pastry cutter, cut the butter into the flour until the butter is pea-sized.
2.) Make a well in the center of the butter/flour mixture and add the water. Cut the water into the mixture until it is completely combined and it forms a slightly sticky ball of dough. You can turn the dough onto a floured countertop and knead a little.
3.) Sprinkle flour on your countertop and roll the dough out to a 7"x9" rectangle. Using the long edge of the dough, fold it into a tri-fold, rotate 90º and roll out again to a 7"x9" rectangle. Repeat this step 3 times - this will create a layered, crispy crust. Cut in half and wrap each half in plastic wrap and chill for at least 2 hours before using.
FILLING.
1.) In a large bowl, whisk together all of the filling ingredients. Place in the refrigerator until ready to assemble.
ASSEMBLY.
1.) Preheat oven to 425ºF.
2.) In a small bowl, whisk together egg yolks and water to create an egg wash. Set aside.
3.) In another small bowl, mix together sugar and cinnamon. Set aside.
4.) Unwrap one piece of puff pastry dough and roll out on a lightly floured surface until it is 1/8" thick. Dip a 4" round cookie cutter in flour and cut out as many circles as you can. Remove excess dough, knead into a ball, wrap in plastic, and place back into the refrigerator.
5.) Scoop about 2 teaspoons of filling into the center of each dough disk. Using a pastry brush, apply a light coating of egg wash around the edges of each circle. Fold over into a half-circle and gently press the edges to seal them. Place onto a prepared sheet pan and brush with egg wash. Sprinkle with cinnamon sugar, and place in oven. Bake for 15 minutes, or until they are crispy and golden brown. Repeat until all the dough is used. Enjoy!
