"HARRY POTTER": SHEPHERD'S PIE.

Shepherd's Pie is one of the many delicious dishes offered at Hogwarts' Great Hall. This is a hearty dish full of succulent lamb cooked with fresh herbs and vegetables topped with creamy mashed potatoes and parmesan cheese. Perfect filling dish before a quidditch match or fighting an evil dark lord.
LOOT: 9" X 9" PAN.
MATS.
2 lb. yukon gold potatoes, peeled and quartered
1/4 cup butter
3/4 cup milk
1 tsp salt
1 tsp garlic powder
1 lb. ground lamb
2 tbsp olive oil
1 cup onion, chopped
3/4 cup carrots, peeled and chopped
1 1/2 tbsp fresh rosemary, minced
1 tbsp fresh thyme, chopped
1 tsp salt
1 tsp pepper
1 tsp worcestershire sauce
2 tbsp cooking sherry
1/2 cup chicken stock
1 egg yolk
1 tbsp water
1/2 cup parmesan cheese
EQUIPMENT.
vegetable peeler
medium pot
frying pan
greased 9" x 9" baking dish
brush
small
oven
fire
knife
spatula
hand mixer or potato masher
STRAT.
1.) In a medium pot with salted water, add the yukon gold potatoes. Cover and boil until the potatoes are tender, about 15 minutes.
2.) Drain the potatoes using the lid or a strainer. Place the potatoes back into the pot and add the butter, milk, salt, and garlic powder. Blend together using a hand mixer or a potato masher until smooth. Cover and set aside.
3.) Preheat oven to 350ºF. In a small bowl, whisk together egg yolk and 1 tbsp water. Set aside.
4.) Heat the olive oil in a frying pan over medium heat. Add the onions and carrots and cook until the onions start to become translucent, about 3 minutes.
5.) Add the ground lamb, rosemary, thyme, salt, pepper, and worcestershire sauce. Cook until the meat is well browned - about 5 minutes.
6.) Add the cooking sherry and chicken stock. Simmer uncovered until the liquid reduces in half, about 10 minutes.
7.) Using a rubber spatula, scrape the lamb mixture into a greased 9" x 9" baking dish. Press down on the mixture so it's nice and tight - this prevents it from making a huge mess when you try and serve it.
8.) Scrape the mashed potatoes on top of the lamb mixture. Press down into the dish and smooth out the top with a spatula.
9.) Using a brush, brush the top of the potatoes with the egg yolk mixture and sprinkle with parmesan cheese. Place into the oven and bake for 30 minutes, or until the top is a nice golden color. Now Slytherin to a chair and enjoy your newest cooking spell!
