"ANCHORMAN": DELICIOUS, FILLING BURRITO.

Great Odin's Raven, could it be a recipe from Anchorman?? Yes! One of the most hysterical scenes in "Anchorman" is when Ron Burgundy throws his delicious, filling burrito out his car window and hits Jack Black with it, causing him to wreck his bike. I saw that burrito splatter on the ground and thought, "Jeez, there's a lot of rice in that burrito!" Anyway, they then proceed to talk it out when Jack takes Baxter and punts him off the bridge. It's sad, but ridiculously funny seeing the stuffed animal plummeting into the water. Here I have a created a recipe to duplicate that projectile burrito from such an iconic movie. I hope you all enjoy!

LOOT: 6 BURRITOS

MATS.

SPANISH RICE.

1 cup brown rice

2 1/2 cups chicken stock

2 tbsp tomato paste

1 tbsp fresh cilantro, minced

1/4 tsp pepper

GUACAMOLE.

4 avocados

1 lime, juiced

1 jalapeño, minced

3 garlic cloves, minced

1/2 cup chopped onion

3/4 tsp salt

1/2 tsp pepper

1 tbsp olive oil

MEAT.

2 tbsp olive oil

1 cup chopped onion

3 garlic cloves, minced

1 1/2 lb. ground beef (or chicken or turkey)

4 tsp jalapeño, minced

1 1/4 tsp salt

1 tsp pepper

2 tsp cumin

1/2 tsp chili flakes

2 limes, juiced

OTHER.

1 - 16oz can refried beans, heated

2 cups shredded iceberg lettuce

salsa

sour cream

6 large flour tortillas

2 tbsp butter + extra per batch

EQUIPMENT.

medium-sized pot

large bowl

frying pan

knife

potato masher

cast iron skillet

fire

tongs

spatula

STRAT.

SPANISH RICE.

1.) In a medium-sized pot, add all of the spanish rice ingredients. Turn the flame to medium heat, cover, and bring to a boil.

2.) Once your rice begins to boil, reduce the heat to low to bring the rice to a simmer. Tilt the lid of the pot so it creates a vent. Simmer for about 45 minutes, or until the rice is tender. If the rice is still a bit crunchy, feed it a little water and cook until it is absorbed. Set aside.

GUACAMOLE.

1.) In a large bowl, combine all of the guacamole ingredients. Combine using a potato masher until it's smooth with a little bit of chunkiness. Cover with plastic wrap to prevent oxidation and set aside.

MEAT.

1.) Heat the olive oil in a frying pan over medium-low heat. Add the chopped onion and garlic and cook until tender, about 2 minutes.

2.) Add the meat, jalapeño, salt, pepper, cumin, chili flakes, and lime juice. Cook uncovered until the meat is well browned, about 5 minutes. Set aside.

ASSEMBLY.

1.) In a cast iron skillet over medium heat, melt 2 tbsp of butter.

2.) Turn on a burner to a low flame and quickly heat the tortillas over the open flame. Use tongs to flip the tortilla so you don't burn your fingers. It should take about 15 seconds per side. This will make the tortilla easy to fold and prevent it from breaking.

3.) Place the tortilla on to a plate. Now here is where you can have some fun. I don't like to tell people how much of what to use on something like this because it's all a matter of taste and opinion! For example: I personally don't like to use a lot of salsa, so I only put on a little bit, but feel free to fill yours with as much as you want! I'll just tell you the best method of assembly. Rule #1 - do not overfill!! It may be tempting, but it will cause a headache in the long run. Make sure your filling is a little off-center, about 4" wide rectangle with about 1 1/2" - 2" at the top and bottom of the tortilla for folding purposes. First, lay down your sour cream and guacamole. Then do a layer of refried beans followed by a layer of spanish rice. Top with some ground meat, lettuce, then salsa.

4.) Using the shorter side, fold the tortilla over about 2/3 of the way. Gently push the filling into the crease, then fold both ends inward. Finish by rolling tightly, but not hard enough to where the filling starts to ooze out. Your burrito should be nice and securely sealed.

5.) Place the burrito crease side down into the cast iron skillet. It is important that the crease side is down, because once it cooks it will create a nice seal. Cook for about 4-5 minutes, until it the bottom is a crisp golden brown. Carefully flip using a spatula and grill the other side for another 4-5 minutes. Remove and serve immediately. Remember - do not litter, and do not throw this out a car window.
