MAKE IT LEGENDARY: ROASTED GARLIC AND CHIVE DIP.

This is a great addition to appetizers. This recipe I originally paired with Crab Cakes, but you can use it with vegetables, chicken strips, or any other appetizer you like! It has a great garlic flavor with a nice aftertaste of the lemon and chives.

**Refrigerating overnight greatly enhances the flavor!

LOOT: 1 CUP

MATS.

1 head of garlic

1 tsp olive oil

pinch of salt and pepper

1 cup mayonnaise

1/4 cup chives, chopped

1/4 tsp salt

1/2 tsp pepper

juice of 1 lemon

EQUIPMENT.

oven

foil

knife

bowl

spatula

STRAT.

1.) Preheat oven to 400ºF.

2.) Chop the top of the garlic head off so the cloves are exposed. Drizzle with 1 tsp and season with a pinch of salt and pepper. Wrap in tin foil, leaving a small hole for ventilation at the top, and bake for 40 minutes.

3.) Remove the garlic from the oven and unwrap. Let it cool for 10 minutes, then squeeze all the delicious roasted garlic from its shell. Finely chop the garlic and add to a bowl.

4.) Add the mayonnaise, chives, salt, pepper, and lemon juice to the garlic. Mix together with a spatula and serve with Crab Cakes, veggies, or any other appetizer you choose!
