"WORLD OF WARCRAFT": CRAB CAKES.
Quick and tasty recipe for a delightful appetizer or snack. Crab cakes are one of my favorite things to eat, but I never think to make them. This recipe is so simple and easy that it gives no excuse to not have them more often! These are traditionally made with Crawler Meat, but if you can't get to Azeroth to do some crawler farming you can use crab. May grant a little Stamina and HP recovery, and will ALWAYS buff Spirit :) Goes great with Roasted Garlic and Chive Dip!
LOOT: 10 CRAB CAKES.
MATS.
1 lb cooked crab, finely chopped* (or crawler meat if you're in Azeroth)
1/4 cup green onions, sliced thin
2 tbsp fresh parsley, finely chopped
1 1/2 tbsp fresh lemon juice
1/4 cup + 2 tbsp mayonnaise
1 egg
1 clove garlic, minced
1/2 tsp pepper
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp onion powder
1/2 cup panko (Japanese breadcrumbs)
1/2 cup flour
oil for frying (canola, vegetable, etc)
EQUIPMENT.
large bowl
shallow dish
frying pan
fire
1/4 cup scoop or measuring cup
spatula
plate with paper towels
STRAT.
1.) In a frying pan over medium-high heat add enough oil to cover the bottom of the pan about 1/4". Heat it enough to where you splash a tiny bit of water in the oil and it sizzles, but doesn't pop uncontrollably.
2.) In a large bowl, add the crab meat, green onions, parsley, lemon juice, mayonnaise, egg, garlic, pepper, smoked paprika, salt, onion powder, and panko. Mix until it forms a nice, consistent mass. The mixture should be moist, but not fall apart when trying to shape into patties. If the mixture is too wet, add more panko, and if it seems to dry, add more mayonnaise.
3.) In a shallow dish, add the flour. Using a 1/4 cup scoop, scoop some of the crab mixture and form it into a little patty, about 2 1/2" in diameter. Lightly coat with flour and carefully add to the hot oil.
4.) Fry the crab cakes (about 3-4 at a time) about 4 minutes on one side. Carefully flip with a spatula and fry on the other side for about 3 minutes. The cakes should be golden brown and crispy. Drain on a paper towel and serve warm with Roasted Garlic and Chive Dip (coming soon!)
*You can use fresh crab or canned. I personally used the regular crab meat (not the lump) because crab is pretty darn expensive and since you have other flavors along with the crab and is mixed with breadcrumbs and other "fillers," you don't have to break the bank with fresh crab. You still get that flavor and texture that the crab offers without having to worry about cracking all those shells either. Now if you were eating straight up crab I would do fresh hands down, but since it is in this form it really isn't necessary. Think of it like tuna salad vs. a nice tuna steak :)
