"WORLD OF WARCRAFT": SPICE BREAD.

The very first recipe you learn in World Of Warcraft - Spice Bread. Crispy on the outside and tender on the inside, this bread pairs wonderfully with hearty soups and stews, such as Dalaran Clam Chowder. Restores minor HP and offers no buffs, however it does provide a delicious earthy flavor and fragrance that will tantalize your senses. Don't be a noob and try to make this with Hot Spices instead of Mild Spices! This recipe is also used for Spice Bread Stuffing.

LOOT: 2 LOAVES

MATS.

8 oz warm water

2 - 1/4 oz packets active dry yeast

1/2 tsp sugar

2 cups + 1 cup reserve bread flour

MILD SPICES.

1 tsp salt

1/4 tsp white pepper

1/2 tsp ground sage

3/4 tsp coriander

1/2 tsp thyme

EQUIPMENT.

STRAT.

1.) In a mixer with a with a dough hook attachment, add the water, yeast, and sugar and mix. Let it sit in the mixer until the mixture starts to bubble and foam, about 10 minutes.

2.) In a separate bowl, mix together 2 cups of bread flour and mild spices until thoroughly combined. Do not skip this step! If too much salt gets in direct contact with the yeast it will kill it, and your bread will not rise.

3.) Add the flour mixture to the mixer and mix on speed 2 until all the flour is incorporated. Add the reserved bread flour a little bit at a time to the mixer until the dough forms a nice smooth ball and clears the side of the bowl, about 4-5 minutes.

4.) Turn the dough onto a floured surface and knead until the dough is nice and smooth, about 2 minutes, adding extra bread flour if needed. Place into a bowl greased with a little olive oil. Cover with plastic wrap and let it rise for 1 to 1 1/2 hours, or until it's doubled in size

5.) Preheat oven to 400*F.

6.) Turn the dough onto a floured surface and punch down. Divide in two and gently shape into balls, kneading it slightly if needed.

7.) Oil 2 bread pans and line with parchment paper. The paper should go up and over the long edges of the pans, forming a sling. Place the dough balls into the bread pans and pat into the sides so the dough fits nicely. Slice about 1/4" deep along the top of each loaf - this will create the split-top look. Let rise again another 20 minutes.

8.) In a shallow baking dish (I use a Pyrex pie pan) add about a 1/2" of cold water. Place on the bottom rack of your oven to create a steaming effect in your oven (this will create a crusty outside and soft inside.) Put the bread pans on the middle rack of the oven and bake for 25-30 minutes, or until there's a nice golden color on your loaves. Let cool for 10 minutes, slice, and serve.
