LOOT: 6 SERVINGS
MATS.
1 tbsp butter
1 1/2 cups onion, chopped
4 cups russet potatoes, chopped into 1/2" cubes
1 cup celery, chopped
6 tbsp flour
4 tbsp butter
4 - 6.5 oz cans chopped clams in clam juice
1 cup water
1/2 tsp salt
3/4 tsp pepper
1 bay leaf
2 tbsp white wine
2 cups cream
EQUIPMENT.
knife
large pot
whisk
frying pan
fire
STRAT.
1.) Over medium heat, melt 1 tbsp of butter in a frying pan. Add the garlic, chopped onion, and chopped celery. Fry for about 5 minutes, or until the vegetables begin to soften. Remove from heat and set aside.
2.) Open the cans of clam meat and drain, reserving 2 cups of clam juice. Set aside.
3.) In a large pot over medium-low heat, melt 4 tbsp of butter. Add the flour and whisk vigorously for 30 seconds to form a roux. Once the mixture is like a wet sand consistency, slowly add the clam juice while constantly whisking. Make sure to add the juice a little bit at a time so you do not have chunks of buttery flour in your soup. Once the clam juice is fully incorporated, mix in the water, potatoes, onion mixture, salt, pepper, bay leaf and white wine. Cover and cook over a medium-low flame for 25-30 minutes, or until the potatoes start to become tender, stirring occasionally.
4.) Uncover and stir in the cream. Keep uncovered and simmer for an additional 15 minutes to thicken the soup a little. Serve with Spice Bread (recipe coming soon).
