"OFFICE SPACE": EXTREME FAJITAS.
These fajitas are EXTREMELY flavorful. Juicy marinated steak topped with a medley of blistered peppers, this is a recipe guaranteed to cure any case of the Mondays. No flair required to enjoy these, and no annoying Chotchkie's waiters to deal with!
LOOT: 12 FAJITAS MATS.
2 lb skirt steak or carne asada meat (or chicken)
4 tbsp olive oil
zest of 2 limes
1/2 cup lime juice (or juice from 4 limes)
2 tsp salt
1 1/2 tsp pepper
2 tsp chili powder
4 cloves garlic, minced
2 tbsp fresh cilantro, chopped
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
1 small red onion
2 jalapeños
1 tbsp olive oil
pinch of salt and pepper
12 flour tortillas
2 avocados, sliced
sour cream
EQUIPMENT.

9"x13" baking dish (or shallow dish for marinating)
cast iron skillet

STRAT.
1.) In a small bowl, combine 4 tbsp olive oil, lime zest, lime juice, salt, pepper, chili powder, minced garlic, and fresh cilantro. Set aside.
2.) Using a meat tenderizer, pound the meat until it's roughly 1/2" thick. Place the meat in a 9"x13" baking dish or large shallow dish. Pour the marinade over the meat and cover the dish in plastic wrap. Place in the refrigerator and marinate overnight for maximum flavor. Marinade a minimum of 6 hours.
3.) Remove the ends of the red onion. Stand up on one of the ends and slice in half. Slice into 1/2" strips. Cut the bell peppers in half lengthwise. Remove the core and seeds and cut into 1/2" strips. Repeat for the jalapeños, but cut into 1/4" strips. Place in a large bowl and toss with 1 tbsp olive oil and pinch of salt and pepper. Set aside.
4.) Heat a cast iron skillet over high heat. Once the skillet is hot, gently shake excess marinade off the steak and carefully add to the pan. Sear on one side for 3 minutes. Using tongs, carefully flip the steak and cook an additional 3 minutes (this is for a medium rare cook). Remove from heat and let stand on a cutting board for 5 minutes. Slice into 1/2" strips.
5.) Once steak is cooked, add the peppers to the same skillet over high heat. Blister the vegetables for about 5 minutes, tossing occasionally with tongs. Remove from heat.
6.) Serve in warmed tortillas with sour cream and avocado slices if desired.
