"DOUG": KILLER TOFU.

This tofu recipe is KILLER! Judging from The Beets' hit song "Kiler Tofu," they're encouraging people to eat healthier with lyrics such as "fast food feels fuzzy" and "I eat my sugared cereal, but it makes my teeth bacterial." This recipe is a healthy way to prepare tofu without sacrificing any taste! Don't feel like such a nerd when you eat this strange bean curd. Eat it, so it won't eat you!

LOOT: 4 SERVINGS

MATS.

MARINADE.

2 lbs firm tofu

1/2 cup balsamic vinegar

1/2 cup sesame oil

1/4 tsp pepper

1/4 tsp salt

1 1/2 tsp fresh thyme

1 tsp chili garlic paste

SALSA.

2 large mangos

1 large avocado

1 1/2 tsp fresh thyme, finely chopped

1 1/2 tsp balsamic vinegar

1 1/2 tsp shallots, minced

pinch of salt and pepper

1 tsp olive oil

4 servings brown rice, cooked to packages instructions

toasted sesame seeds

EQUIPMENT.

cast iron skillet

STRAT.

MARINADE.

1.) Drain the tofu and pat with paper towels. Wrap in paper towels and let it sit for 10 minutes to absorb a lot of the moisture.

2.) In a small bowl, whisk together the balsamic vinegar, sesame oil, pepper, salt, fresh thyme, and chili garlic paste. Set aside.

3.) Once the tofu is drained, cut it into 1/4" thick slices. Layer into a 9x13 pan or a large, shallow dish. Pour half of the balsamic vinegar mixture* over the tofu and let it marinade, covered, in a refrigerator for at least 4 hours.

SALSA.

1.) Peel and chop the mangos and avocado and chop into 1/2" pieces. Place into a small bowl.

2.) Add the fresh thyme, balsamic vinegar, shallots, salt, and pepper to the bowl. Mix until thoroughly combined. Place in the refrigerator.

ASSEMBLY.

1.) Heat 1 tsp of olive oil over medium high heat in a cast iron skillet.

2.) Once skillet is hot, add enough tofu to cover the bottom of the pan. Sear for 3 minutes and flip, and sear for another 3 minutes.

3.) Remove and drain on a paper towel. Repeat until all tofu is cooked.

4.) Serve over a bed of brown rice and topped with remaining marinade, mango avocado salsa, and toasted sesame seeds.

*You can also use the marinade as a dressing! Top any salad mix with the dressing for a healthy side.
