"THE BIG LEBOWSKI": LINGONBERRY PANCAKES.
I have lingonberry pancake recipe for you. This is an incredible recipe for pancakes. They are super light and fluffy, and have a nice, crisp exterior. The lingonberry syrup elevates the pancakes to a whole new level. The lingonberries are like a sour cranberry, which really makes for an interesting breakfast! Lingonberry preserves can be found at IKEA. Now shut the f*** up Donny and make some pancakes! :)
LOOT: 6-7 LARGE PANCAKES.
MATS.
1 1/2 cups + 2 tbsp cake flour
1 cup all purpose flour
1 tsp baking soda
1/4 tsp cream of tartar
1/2 tsp salt
1 tbsp sugar
1 tbsp butter, melted
1 tsp vanilla extract
2 tbsp fresh lemon juice (about 1 lemon)
2 eggs
1 3/4 cups milk
extra butter for pan
1 - 14 oz jar lingonberry preserves
EQUIPMENT.

cast iron skillet or griddle

STRAT.
1.) Preheat oven to 200ºF or the lowest temperature setting available. Over medium-high heat, heat a cast iron skillet or griddle.
2.) In a large bowl sift together the cake flour, all purpose flour, baking soda, cream of tartar, salt, and sugar.
3.) Add the melted butter, vanilla extract, lemon juice, eggs, and milk and whisk together until combined. Do not over-mix or your pancakes will turn out tough!
4.) Carefully add just enough butter just to grease the bottom of your pan. Add 3/4 cup of pancake batter to the pan and cook until the edges of the pancakes start to look dry and the center starts to bubble, about 2 minutes. Gently flip the pancake and cook for another 1-2 minutes, or until both sides are golden. If your pancakes look pale, turn up the heat a little bit. If they're dark, turn the heat down. Ideally the pancakes should be a golden brown color with a crispy exterior and a fluffy interior.
5.) Place done pancakes on an oven safe plate and place in the oven to keep them warm while you're cooking the rest. Repeat until all of the batter is used up.
6.) In a small saucepan over medium-low heat, add the lingonberry preserves. Heat, stirring occasionally, until it is warm and a nice syrup consistency, about 5 minutes.
7.) Drizzle the syrup over pancakes and serve with bacon, because bacon.
