"THE RETURN OF THE LIVING DEAD": OH FUDGE!


This is actually a very special recipe to me. This recipe is dedicated to my dear friend Beverly, who actually starred in this 80s cult classic as Tina! Her and her family (including her twin sister who is actually my boss!) have been incredibly supportive of my journey, by offering encouraging words, tasting my treats, and sharing my website with all of their friends. I couldn't not do a recipe dedicated to her, especially with such an iconic line like "oh fudge!!" which she says in real life! Thank you Beverly and family, and I hope you all enjoy this tasty recipe!

LOOT: 1 - 9" x 13" PAN

MATS.

1 - 14 oz can sweetened condensed milk

3 tbsp butter, room temperature

1 1/2 cups bittersweet chocolate chips (60% cacao)

1 cup semi sweet chocolate chips

2 tbsp dark cocoa powder, sifted

pinch of salt

1 cup pecans, chopped

EQUIPMENT.

medium saucepan

medium bowl

spatula

oven mitt

9"x13" pan

knife

STRAT.

1.) Line a 9"x13" pan with tin foil. Grease with nonstick spray or with a little oil. Set aside.

2.) In a medium saucepan add about 3 cups of water and bring to a boil.

3.) In a medium bowl, add the sweetened condensed milk, butter, bittersweet chocolate chips, semi sweet chocolate chips, sifted dark cocoa powder, and pinch of salt.

4.) Once the water is boiling, reduce the flame to low heat to maintain a nice simmer. Place the bowl with the chocolate mixture on top of the simmering pan. The bowl should be larger than the pot so it doesn't sink down into the pot. This little contraption is known as a bain marie, which uses the power of steam to gently melt the chocolate! The reason we melt the mixture this way is to ensure the chocolate doesn't get burned and everything gets melted together gently and nicely.

5.) Stir the mixture constantly with a spatula while using an oven mitt to hold on to the bowl. Make sure to frequently scrape the sides and bottom of the bowl to prevent the chocolate from burning. Once everything is melted together nicely and uniformly, remove from heat. Add the pecans and fold them in with a spatula. Pour into the prepared 9"x13" pan and place in the refrigerator for 2 hours before slicing into 1" squares.
