"SKYRIM": CHARRED SKEEVER MEAT.
Super delicious and easy recipe for Charred "Skeever" Meat! Since I'm sure most of your butchers don't offer skeever meat, we're just going to have to settle with pork tenderloin. Enjoy!
LOOT: 4 SERVINGS.
MATS.
2 tbsp olive oil
1 - 1 1/2 lb(ish) pork tenderloin (faux skeever meat)
1 tbsp chili powder
1 tsp garlic powder
1/4 tsp pepper
1/2 tsp salt
1/2 tsp onion powder
1/2 tsp sugar
EQUIPMENT.
cast iron skillet
tongs
meat thermometer
fire
oven
STRAT.
1.) Preheat oven to 375*F.
2.) In a small bowl, mix together the chili powder, garlic powder, pepper, salt, onion powder, and sugar. Rub onto the faux skeever meat until it is completely covered in spices.
3.) In a cast iron skillet over medium high heat, heat the olive oil until it starts to smoke a little.
4.) Carefully place the skeever meat into the cast iron skillet with tongs. Sear the meat for 2-3 minutes, then flip it 90 degrees and repeat. Repeat until all "4 sides" of the meat are seared and have a nice, dark crisp on the outside.
5.) Insert a meat thermometer (digital works best with a long cord) into the thickest part of the meat. Place the skillet into the oven with the thermometer and cook until the internal temperature of the meat is 160*F - about 30-45 minutes, depending on the size of your tenderloin.
6.) Carefully remove from the oven and let it rest for 10 minutes. Don't skip this step! Letting the meat rest lets the juices redistribute back into the meat so it doesn't all come gushing out when you slice it!
7.) Cut into half inch slices and serve.
