"SKYRIM": BREAD.
No need to buy bread at an inn anymore now that you can make it at home! This is a recipe for a French style bread, perfect for dipping in soups and chilis, or making Garlic Bread with.
LOOT: 2 LOAVES
MATS.
8 oz warm water
2 - 1/4 oz packets active dry yeast
1/2 tsp sugar
2 cups + 1 cup reserve bread flour
1 tsp salt
EQUIPMENT.

STRAT.
1.) In a mixer with a with a dough hook attachment, add the water, yeast, and sugar and mix. Let it sit in the mixer until the mixture starts to bubble and foam, about 10 minutes.
2.) In a separate bowl, mix together 2 cups of bread flour and salt until thoroughly combined. Do not skip this step! If too much salt gets in direct contact with the yeast it will kill it, and your bread will not rise.
3.) Add the flour mixture to the mixer and mix on speed 2 until all the flour is incorporated. Add the reserved bread flour a little bit at a time to the mixer until the dough forms a nice smooth ball and clears the side of the bowl, about 4-5 minutes.
4.) Turn the dough onto a floured surface and knead until the dough is nice and smooth, about 2 minutes. Place into a bowl greased with a little oil. Cover with plastic wrap and let it rise for 1 to 1 1/2 hours, or until it's doubled in size
5.) Preheat oven to 400*F.
6.) Turn the dough onto a floured surface and punch down. Divide in two and gently shape into balls, kneading it slightly if needed. Roll in bread flour and shake off any excess.
7.) Place the dough balls onto a sheet plan lined with a silpat or parchment. Shape into loaves about 12" in length and 4" in width. Slice 3 diagonal lines about 1/4" deep on the top of each loaf. Let rise again another 20 minutes.
8.) In a shallow baking dish (I use a Pyrex pie pan) add about a 1/2" of cold water. Place on the bottom rack of your oven to create a steaming effect in your oven (this will create a crusty outside and soft inside.) Put the bread on the middle rack of your oven and bake for 25 minutes, or until there's a nice golden color on your loaves.
