"AMERICAN PIE": WARM APPLE PIE.

Here's a classic recipe for a classic movie moment. There's nothing like warm apple pie...

There really isn't much else to say, I think the pie pretty much speaks for itself.

So...

LOOT: 1 - 9" PIE

MATS.

PIE DOUGH.

3 cups flour

2 tbsp sugar

1/2 tsp salt

1/4 cup shortening

1/4 cup cold butter

1 tbsp apple cider vinegar

1/2 cup + 1/4 cup reserve ice water

FILLING.

3 gala apples (about 1 lb)

3 golden delicious apples (about 1 lb)

vegetable peeler

1 tbsp lemon juice

2 tbsp butter

1/4 cup sugar

1/4 cup brown sugar

3/4 tsp cinnamon

1/4 tsp nutmeg

pinch of salt

TOPPING.

1 tbsp butter. melted

2 tbsp sugar

1/2 tsp cinnamon

EQUIPMENT.

9" pie pan

pastry cutter

bowl scraper

rubber spatula

large frying pan

knife

fire

1 1/2" round cookie cutter

pastry brush

STRAT.

PIE DOUGH.

1.) In a large bowl, add the flour, sugar, and salt. Mix together.

2.) Cut the butter into small cubes and add to the flour mixture. Add the shortening and cut the butter and shortening into the flour with a pastry cutter until the fats are pea sized.

3.) Add 1/2 cup of ice water and apple cider vinegar and cut into the flour/butter mixture. Once it starts to come together, knead together with a bowl scraper or rubber spatula until it forms a nice ball of dough (it should have just a touch of stickiness.) If your dough is too dry, incorporate more water 1 tbsp at a time. If it's too wet, add flour 1 tbsp at a time.

4.) Divide the dough in half and shape into discs. Wrap in plastic wrap and refrigerate for at least 2 hours before using.

FILLING.

1.) Peel the apples and dice them. Learn how to easily dice an apple here! Toss the apples with the lemon juice and set aside.

2.) Melt the 2 tbsp of butter over a medium-high flame in a large frying pan.

3.) Add the apples and sauté until they start to become tender, about 10 minutes.

4.) Add the sugar, brown sugar, cinnamon, nutmeg, and salt. Mix together and cook an additional 5 minutes, or until the mixture thickens. Remove from flame and set aside.

ASSEMBLY.

1.) Preheat your oven to 400*F.

2.) On a lightly floured surface, roll one dough disc out until it is 1/8" thick. Gently put the dough into a 9" pie pan and press up onto the sides and bottom of the pan. Make sure it fits the pan snugly so no air pockets develop between the dough and pan. There should be an inch of overhang of dough over the pan. Place in the fridge.

3.) Roll out the second disc to the same thickness. Remove the prepared pie pan from the fridge and pour in the apple filling and press down with a spatula in so there is no air in the filling. Gently place the second rolled out piece of dough on top of the pie pan. Trim any excess dough from the sides, and press together the 2 pieces of dough until it is sealed nicely. Cut off excess dough so there is only about a 1/2 inch of overhang. Fold the edges of dough up and over itself so it creates a taller crust along the edge of the pan. Crimp the edges with your fingers to make it extra secure. Slice 5 little slits in the middle of the pie (so it looks like a star but none of the slices touch). With a 1 1/2" round cookie cutter, cut a hole off center in the top of the pie to resemble...well you know.

4.) In a small bowl, whisk together 2 tbsp of sugar and 1/2 tsp cinnamon.

5.) Brush the top of the pie with the melted butter. Sprinkle with the cinnamon sugar and place the pie in the oven. Bake for 30 minutes, or until the crust is golden brown. Enjoy!
