"GAME OF THRONES": ICED BLUEBERRIES.

This is a wonderful recipe for summertime. It is a light and tasty desert featuring frozen blueberries with a delightfully fragrant and delicious cream, delicately spiced with just the right amount of lemon, vanilla and cinnamon. Enjoy before winter comes.

LOOT: 4 SERVINGS

MATS.

2 cups fresh blueberries

2 egg whites

1 c. heavy cream

zest from 1 lemon

pinch of cinnamon

1/2 tsp vanilla

2 tbsp honey

EQUIPMENT.

saucepan

fire

whisk

microplane

STRAT.

1.) Thoroughly rinse the blueberries and remove any extra stems or foliage. Pat dry with a paper towel and place them in a shallow baking dish, laying them in a single layer. Place in the freezer and freeze for at least 1 hour.

2.) In a saucepan whisk together the egg whites and heavy cream over medium low heat. While constantly (and somewhat gently) stirring with a whisk, cook until the mixture just begins to thicken and bubble, about 5 minutes. You should feel some resistance when you stir.

3.) Remove the saucepan from the flame and whisk in the lemon zest, cinnamon, vanilla, and honey.

4.) Divide the blueberries in 4 bowls. Pour the desired amount of cream over the blueberries and serve. You can serve the cream either warm or chilled (I prefer chilled.) Let the cream cool at least 10 minutes before pouring of the blueberries if you would like to enjoy it warm (the coldness is not as harsh, and the cream has a more liquid consistency as opposed to the chilled cream), or if you would like it chilled for more of an ice cream/frozen yogurt kind of feel, let the cream cool to room temperature and then place in the refrigerator overnight to chill. It will thicken in the fridge and be almost like a yogurt consistency. Enjoy!
