"GAME OF THRONES": CORN FRITTERS.
Crispy two-bite appetizers that are like little fluffy corn pancakes. They are a savory, satisfying appetizer that also have a subtle hint of sweetness from the sweet corn and honey. Tastes like they're straight from King's Landing! Make it legendary and serve with Spicy Apricot Ginger Sauce.
LOOT: 20 FRITTERS
MATS.
1 tbsp butter
2 cups frozen golden sweet corn
1/2 tsp salt
1/4 tsp pepper
1 tbsp honey
1 egg, beaten
1/4 cup buttermilk*
1/2 cup flour
1/2 cup cornmeal
canola oil
EQUIPMENT.

STRAT.
1.) In a frying pan melt the butter over medium heat. Add the corn and sautee until it begins to caramelize, about 5-7 minutes.
2.) Remove the corn from the heat and add to a medium-sized bowl. Add the salt, pepper, honey, beaten egg, buttermilk, flour, and cornmeal and mix until thoroughly combined.
3.) In a clean frying pan, add a 1/4" of canola oil and heat over a medium flame until it's hot, but not smoking. Sprinkle a little water into the oil and if it starts to pop then it is ready to go.
4.) Carefully spoon the batter into the heated pan 1 tablespoon at a time, and flatten them into little disks with the back of a spoon. Fry for about 1 minute, carefully flip with a spatula, and cook for about another minute, or until they are golden brown and crispy.
5.) Carefully remove the fritters from the pan with a spatula and place onto a plate with paper towels to drain any excess oil. Repeat until all of the batter is used up. Serve with Spicy Apricot Ginger Sauce.
*PRO TIP: If you don't have buttermilk or don't want to buy a large carton for such a small amount, make your own! All you need is milk and lemon juice. For every cup of milk mix in 1 tablespoon of lemon juice and let it sit for a couple of minutes until it starts to curdle. Voilà ! You now have buttermilk.
