"GAME OF THRONES": LEMON CAKES.

Sweet and tangy little cakes fit for a king. Addictive and delicious, no wonder they are Sansa's favorite snack. These are very light little cakes with a zesty glaze, with just the right amount of lemon to where you definitely know it's there, but they are not sour.

LOOT: 40 CAKES

MATS.

1/2 cup (1 stick) butter, softened

1 1/2 cups sugar

2 eggs

zest of 2 lemons

1/2 tsp vanilla extract

pinch of salt

juice from half a lemon

2 1/2 cups flour

2 cups powdered sugar, sifted

juice from 1 lemon

EQUIPMENT.

mixer with paddle attachment (or hand mixer)

microplane

baking sheets

tablespoon scoop

sifter

STRAT.

1.) Preheat the oven to 350*F and line 2 baking sheets with parchment paper.

2.) Cream together the butter and the sugar in a mixer until it's light and fluffy, about 2 minutes.*

3.) Add the eggs and mix until combined. Add the lemon zest, vanilla, and juice of half a lemon and mix until combined.*

4.) Add the flour and pinch of salt and mix until everything is combined and the dough is smooth, about 2 minutes. Cover and refrigerate your dough for 1 hour (this will prevent your cookies from spreading while baking.

5.) Mix together the powdered sugar and juice from 1/2 a lemon until it is completely smooth. Cover and set aside.

6.) Using a tablespoon-sized portion scoop (or just a spoon), scoop a heaping spoonful of dough and roll into a ball. Place on the prepared baking sheets and repeat, spacing them out at least 2 inches apart (15 fit nicely on a half sheet pan.) Bake in preheated oven for 14 minutes, or until they are fully cooked (they should be a light golden color)

7.) Allow them to cool for 5 minutes, then roll the tops of the cookies in the prepared lemon glaze. Place them on a cooling rack, letting them cool completely and letting the icing to harden.

*PRO TIP: Don't overmix your dough! The longer you mix, the more likely your cookies will spread or be tough.
