"INVADER ZIM": CHICKEN TACOS!!!

TACOTACOTACO!!! You need this taco recipe or you will explode!!! No, seriously though, you gotta get yourself some of these tacos. They are pretty simplistic, but they pack a pretty great flavor punch between the salt, the lime, cilantro, and jalapenos. Oh, and the guacamole recipe makes a lot more than you need for the just the tacos, because everyone loves to eat tacos with chips and guacamole!

LOOT: 8 TACOS

MATS.

TACO MEAT.

1 tbsp olive oil

2 large chicken breasts

2 tbsp lime juice

1 tsp salt

1/2 tsp pepper

1 tsp chili powder

1/2 tsp garlic powder

1 tsp cumin

16 small corn tortillas

sour cream

GUACAMOLE.

4 avocados

1 lime, juiced

1 jalapeno, minced

3 garlic cloves, minced

1/2 cup chopped onion

3/4 tsp salt

1/2 tsp pepper

1 tbsp olive oil

PICO DE GALLO.

2 roma tomatoes, diced

1 1/2 cups chopped onion

1/4 cup cilantro, minced

1 lime, juiced

pinch of salt and pepper

EQUIPMENT.

pan

knife

potato masher (or fork)

STRAT.

TACO MEAT/ASSEMBLY.

1.) Place your pan over medium heat. Add the olive oil and let it heat for a couple of minutes.

2.) In a small bowl, mix together the salt, pepper, chili powder, garlic powder, and cumin.

3.) Place the chicken breasts into the heated pan. Pour the lime juice over the chicken breasts, then season the chicken with with the seasoning blend from step 2.

4.) Cover the chicken and cook for about 6 minutes. Flip the chicken breasts and cook for an additional 6 minutes, or until it is thoroughly cooked to 165*F (no longer pink and the juices run clear)

5.) Remove the chicken breasts from the pan and let them rest on a cutting board for about 10 minutes. This will seal in all the juicyness.

6.) Chop the chicken into 1/2" cubes. Heat the corn tortillas in a pan, or over a stove burner on low heat (make sure not to burn them!). Stack 2 tortillas on top of each other, and top with sour cream, chicken, guacamole, and pico de gallo (recipes below)

GUACAMOLE.

1.) Cut the avocados in half. Remove the pits and scoop the avocados into a bowl.

2.) Add the lime juice, diced jalapeno, minced garlic, chopped onion, salt, pepper, and olive oil to the avocados. With a potato masher (or a fork) mash everything together until it is thoroughly mixed. The longer you mix, the smoother your guacamole will turn out.

PICO DE GALLO.

1.) Mix the diced tomatoes, onion, minced cilantro, lime juice, salt, and pepper together until well combined. Wasn't that easy??
