MATS.
1 medium onion, chopped
2 tbsp butter
4 cups chicken broth
1 can pumpkin puree (15 oz)
1/2 tsp salt
3/4 tsp pepper
1 tsp cinnamon
1/2 tsp fresh grated ginger
1 cup heavy cream

STRAT.
1.) In a large pot over medium heat, melt the butter. Saute the onion until it is translucent, about 5 minutes.
2.) Add 2 cups of chicken broth. Bring to a boil and cover, reduce your flame to medium-low and simmer for 15-20 minutes (onions should be very tender.)
3.) Remove your pot from heat, and blend your chicken broth/onion mixer with an immersion blender (or pour into a blender or food processor) and blend until smooth.
4.) Return your pot to the stove, and add the remaining 2 cups of chicken broth, pumpkin puree, salt, pepper, cinnamon, and fresh ginger. Mix well and simmer covered for 5 to 10 minutes (stirring occasionally), until it has thickened a bit.
5.) Remove your pot from heat, and stir in the cream. Enjoy!
